Ingredients

Main Dish
- 3 Chicken thighs, boneless
- 1 Onion, cut thin(ish) pole to pole
- 3 Scallions, cut diagonally
- 1 c dashi
- 1 tbsp sake
- 1 tbsp Soy sauce
- 1 tbsp Sugar
- 1 tbsp gochugaru
- 3 Eggs
- chili crisp
- furikake, for garnish

Directions

Simmering the onions
1. Simmer onions in dashi, sake, soy sauce, mirin, sugar and gochugaru for about 6 minutes until slightly tender.
Adding the chicken
1. Add in chicken along with half the scallions and cook for around 8 minutes until chicken is almost fully cooked.
Adding the eggs
1. Beat eggs lightly so they are not fully combined and drizzle over mixture.
2. Cover and cook for another 3 minutes.
Serving the dish
1. Serve garnished with remaining scallions, chili crisp and Furikake.
