Ingredients

- 2 tbsp oil
- 1 pack instant ramen noodles
- 4 potstickers
- 0.5 Red onion, chopped
- 0.75 cup kimchi
- 0.25 cup Heavy cream
- 0.5 cup Mozzarella cheese, shredded
Sauce
- 1 tbsp (korean) chili powder
- 1 tsp Sugar
- 1 tbsp Soy sauce
- 1 tbsp Gochujang
- 1 tsp Ketchup
- 0.25 cup water

Directions

Cook the potstickers and ramen noodles
1. In a small frying pan, pan-fry some potstickers according to instructions on the package.
2. Meanwhile, bring a pot of water to boil and cook the ramen noodles according to package, about 3-4 minutes; drain well.
Make the sauce
1. In a small bowl, combine Korean chili powder, sugar, soy sauce, Gochujang, ketchup, and water. Mix well to create the sauce.
Cook & combine
1. In a non-stick skillet or cast iron, heat 2 tablespoons of oil over medium-high heat. Add in chopped onions and stir fry for about 3 minutes.
2. Add kimchi to the pan and let it cook for 40-60 seconds to bring out the flavors.
3. Toss in cooked ramen noodles then pour the prepared sauce over them. Stir well to combine.
4. Pour in the heavy cream and mix thoroughly.
5. Place the potstickers in the pan with the noodles and line them up on one side to allow the bottom of the potsticker to soak up some of the sauce.
6. Sprinkle a generous amount of Mozzarella cheese over the noodles. Cover the skillet with a lid and turn off the heat. Allow the dish to sit for 1-2 minutes until the cheese is completely melted.
