Ingredients

- 6 cup All purpose flour
- 3 tsp Black pepper
- 2 Tbs Cayenne pepper
- 12 oz Club soda
- 2 Eggs
- 3 Tbs Garlic powder
- 3 tsp Kosher salt
- Oil, for frying
- 3 Tbs Onion powder
- 3 tsp Smoked paprika
- 1 Whole chicken
- 0.25 cup chicken fry
- 2 Tbs ground mustard

Directions

1. Place your chicken on a large cutting board.
2. Make sure to remove any moisture with paper towels.
3. Position the chicken breast side down on the cutting board with the neck facing towards you.
4. Take sharp kitchen shears holding the neck and cut along one side of the chicken spine, separating it from the ribs.
5. Repeat on the other side of the spine.
6. Flip the chicken so that the breasts face upward and the chicken legs face outward.
7. Press down on the breast bone using your palm until you hear a crack and flatten the chicken.
8. You can save the spine to make chicken stock.
9. Season the chicken with half of the seasonings mentioned.
10. Marinate for at least 3 hours or overnight for best results.
11. Take three cups of flour and place it into a large bowl.
12. Place the chicken fry and club soda into a bowl and mix until a batter is formed.
13. Add the two eggs to the batter and mix.
14. Add your oil to a large enough pot to dip and fry, being careful not to overfill to avoid spillage.
15. Heat until it reaches 325 degrees.
16. In another bowl, add the remaining flour and seasonings and mix.
17. Place the seasoned chicken into the plain flour and cover completely leaving no bald spots.
18. Remove from the flour and add to the batter covering it completely.
19. Add to the seasoned flour and coat every piece of the chicken.
20. Add to the hot oil carefully placing it in.
21. Cook for about 10-15 minutes and remove.
22. Let the chicken rest and increase the heat to 350 degrees.
23. Cook for another 10 minutes or until the chicken reaches an internal temperature of 165
