Ingredients

All room temperature ingredients
- 14 oz Cream cheese
- 0.5 c Sugar
- pinch Salt
- 3 Eggs
- 1 Egg yolk
- 1 tbsp Lemon juice
- 3 tbsp Flour
- 0.75 c Heavy cream
- 1 tbsp Vanilla extract, optional

Directions

Preparation
1. Place the eggs and cream cheese on your kitchen counter for 2-3 hours prior to baking.
2. Break it apart by mixing it with a spatula first.
3. Then place it in the stand mixer.
4. Let it get smooth by letting the mixer run on medium speed for five minutes.
5. Scrape the sides really well each time to ensure a very smooth batter.
Adding Ingredients
1. Now add salt, sugar and cream.
2. Let it go for another 5 minutes before adding in the eggs.
3. You want to add the eggs one by one so it's well blended.
4. Finally add lemon juice.
5. At this point you could also add in some vanilla extract.
6. Mix it for a couple of more minutes.
7. Time to turn off the stand mixer.
8. Give it a last scrape.
9. Then add in the flour.
10. Mix it with a spatula and once you have the perfect consistency, gently pour it in a double layered parchment paper 6’ baking pan.
Baking
1. Now tap the pan a couple of times to get rid of air bubbles.
2. Bake for 35 minutes on 425F degrees.
3. Turn off the oven and let it sit for another 15 minutes before removing it from the oven.
4. Let it cool completely on the counter before placing it in the fridge overnight.
5. You can serve it as is or with some caramel.
