Ingredients

Spam
- 1 can spam
- 1 tbsp Soy sauce
- 1 tbsp Mirin
- 1 tbsp Oyster sauce
- 1 tbsp Brown sugar
Egg
- 4 Eggs
- Salt
- Butter
Rice
- 2 cups short/medium grain rice
- Sugar
- sushi rice vinegar
- Sesame oil
- Scallions
Toppings
- furikake
- Sriracha
- Kewpie mayo
- Scallions

Directions

Prepare the eggs
1. Whisk together 4 eggs.
2. Strain using a sieve for fluffier and smoother eggs.
3. Fry half the eggs on low heat with melted butter until it cooks 80% of the way (It will cook more later).
4. Set aside.
Prepare the spam and glaze
1. Cut spam into small cubes and make the glaze using equal parts soy sauce, mirin, oyster sauce, and brown sugar.
2. Heat up the pan on medium high to fry the spam and coat in the glaze on medium low until it gets sticky.
3. Set aside.
Cook and season the rice
1. Cook rice and season with sugar, sushi rice vinegar, and sesame oil to your preferred taste.
Assemble the dish
1. Assemble using an aluminum tray with the rice at the bottom, scallions, furikake, eggs, spam, more furikake, kewpie mayo, and sriracha.
2. Broil for 3 minutes in the oven and garnish with scallions.
