- 1 spaghetti squash
- 0.5 tsp Healthy Rican Adobo
- 1 tbsp Avocado oil
- 1 lb Ground beef
- 1 tbsp Healthy Rican Adobo
- 2 tsp Healthy Rican Sazón
- 1 tbsp Healthy Rican Sofrito
- 1 Zucchini, chopped
- 1 Small onion, diced
- 1 bell pepper
- 1 clove Garlic, minced
- 0.25 bunch Cilantro, diced
- 0.25 c Tomato sauce
- 1 handful Spinach
- 1 c grape tomatoes

Directions

Preparing the spaghetti squash
1. Cut the spaghetti squash in half.
2. Smother with avocado oil, and Healthy Rican Adobo.
3. Place on an oven rack flat/opening part down.
4. Bake for 30 minutes.
5. With a fork, shred the spaghetti squash.
Preparing the meat
1. Brown the ground beef (drain if needed).
2. Season with Adobo, Sazón and Sofrito.
3. Add chopped zucchini, onions, peppers, garlic and cilantro.
4. Cook on low for 15 minutes.
5. Add the tomato sauce, handful of spinach, and grape tomatoes.
6. Cook for 5 more minutes.
Serving the dish
1. Remove the insides from the squash, add to a plate, and add the meat on top. Or add the meat right inside the squash and enjoy!
