Ingredients

Marinade
- 6 tbsp Light soy sauce
- 1 tbsp Dark soy sauce
- 1 tbsp rice syrup
- 0.5 tbsp Rice vinegar
- 1 star anise pods
- 1.5 c water

Directions

Prepare the marinade
1. Mix all marinade ingredients in a small pot.
2. Boil it, then let it simmer for 5 mins. Take it off the heat and cool down.
Egg-boiling time
1. Get a big pot and fill with water to cover all eggs. Heat it up to a boil on medium-high.
2. Use a ladle or colander to lower eggs into water, avoiding cracks. Keep it at a slow boil.
3. (Optional) For centered yolks, spin the water in a circle for the first minute.
4. Cook eggs: 6 mins for runny yolks, 8 mins for semi-firm, or 11 mins for hard boiled.
5. Get an ice bath ready (or just cold water). Cool eggs for 10 mins after a 30-second rinse.
Let's marinate!
1. Pour cooled marinade into a tall container (big enough for 8 cups of water).
2. Gently crack and peel eggs, dipping them in water to help remove the shell. Add them to the marinade.
3. Refrigerate for at least 6 hours. If in a hurry, drizzle extra marinade on cut eggs. Keep marinated eggs in the fridge for up to a week.
Serving suggestions
1. Serve these beauties over steamed rice or noodles, with extra marinade and homemade chili oil (if you like it spicy).
2. You can also make a noodle soup by adding hot noodle water to the marinade.
