Ingredients

- 1 lb chicken
- 1 package egg roll wrappers
- 1 tbsp Olive oil
- taco seasoning blend
- 1 tsp Cumin
- 1 tsp Garlic powder
- 0.5 tsp Onion powder
- 0.5 tsp Chili powder
- 0.5 tsp Paprika, smoked
- 0.5 tsp Pepper
- 0.5 tsp Salt
- 1 Lime, juiced
- 0.5 c red onions
- 0.5 c red bell peppers
- 3 jalapeños
- 1 c Corn
- 1 c Bean Vivo Organic Baja Black Beans
- 2.5 c Monterey jack cheese, save 1/2 cup to put in the egg rolls
- Vegetable oil, for frying
- Canola oil, for frying

Directions

Marinating the Chicken
1. Place the chicken in a bowl or ziplock bag and add the olive oil, Taco seasoning blend from above, and lime juice.
2. Coat the chicken in this mixture and marinate for at least 20 minutes.
Preparing the Vegetables
1. While the chicken marinates, chop up the onion, bell peppers, and Jalapeños.
Cooking the Chicken
1. Sear the chicken in a hot skillet for about 5 minutes per side or until it reaches 165 internal (chicken thighs work best because they are thinner and will be juicier than breast).
2. Remove from the skillet.
Preparing the Filling
1. To the same pan, add in your chopped veggies and cook for about 5 minutes.
2. Then add in the beans and chicken chopped into cubes.
3. Melt in the Monterey Jack Cheese, saving some to add to the egg rolls.
Assembling the Egg Rolls
1. Lay out the egg roll wrapper in a diamond so that a point is facing you.
2. Add a little Monterey Jack cheese in the lower half of the wrapper.
3. Top with a scoop of chicken, making sure not to overfill.
4. To roll, fold the bottom flap first, then the sides, and begin to roll, tucking the chicken under as you roll.
5. Once you get to the top flap, wet both sides of the corner, then continue to roll.
6. Make sure to keep them flap side down until you place them in the grease.
Frying the Egg Rolls
1. Fry until golden brown, making sure to flip often so they don’t burn.
2. Pair with your favorite dipping sauce and enjoy.
