Ingredients

Ingredients for Sooji Halwa
- 0.5 c sooji (semolina)
- 0.5 c desi ghee
- 1 tbsp besan
- 0.5 c Sugar
- 3 cardamom pods
- 2 c water
- 1 dash orange food coloring
- 1 tbsp Almonds, crushed
- 1 tbsp Pistachios, crushed
Ingredients for Kashmiri Chai
- 1 tbsp loose tea leaves
- 2 cardamom pods
- 1 Star anise
- 2 c water
- 1 c Milk
- 0.5 tsp Pistachios, crushed

Directions

Instructions for Sugar Syrup
1. Add sugar, water and food coloring in a small pot.
2. Boil on a medium heat for 5-10 min until the sugar is completely dissolved.
Instructions for Sooji and Besan Mixture
1. In a separate pot add ghee, cardamom and sooji (Semolina).
2. Stir until the sooji turns to golden brown.
3. Add besan and stir it for another 2 min.
Combining and Finishing
1. Then add the sugar syrup (be very careful when pouring as it will splash).
2. Stir until syrup water is completely absorbed in the Semolina.
3. Sprinkle almonds and pistachios to the top.
4. It’s best to be eaten when warm.
