Ingredients

Cucumber Salad
- 1 Cucumber, large, seedless
- 0.5 tsp Salt
- 1 tsp Light soy sauce
- 1 tsp Chinese black vinegar, or rice vinegar
- 0.5 tsp Sugar
- 1-2 tbsp chili oil
- 1 tsp Sesame oil
- 1 tsp toasted sesame seeds
- 2 clove Garlic, grated

Directions

Preparing the cucumber
1. Use a large knife, such as a cleaver, to smash the cucumber until it cracks open. Alternatively, you can also use a rolling pin or a meat tenderizer.
2. Cut it into bite sizes and transfer to a large bowl.
3. Add salt and mix well. Let it sit for at least 10 minutes. The salt helps draw out excess moisture so the cucumber won't be watery later.
Seasoning the cucumber
1. Drain the liquid and season with soy sauce, vinegar, sugar, chili oil, sesame oil, toasted sesame seeds, and garlic. Mix well.
Serving the cucumber
1. Serve immediately or cold.
2. Bonus: garnish with more sesame seeds and chili oil.
