Ingredients

Ginger Paste
- Ginger
- 1 Thai chili
- 1 Lime, juiced
- pinch Sugar
- 1 tbsp ponzu sauce
- pinch Salt
Spring Rolls
- spring roll wrapper
- vermicelli noodles
- Carrots
- Cucumber
- Mint, or Thai Basil
- Cilantro
- Shrimp

Directions

Make Ginger Paste
1. Make ginger paste first. I made it with my mortar & pestle.
2. You want to add the lime juice & ponzu so the sugar can dissolve.
Marinade the Shrimp
1. Marinade your shrimp in the paste.
Cook Vermicelli Noodles
1. Cook vermicelli noodles.
2. You can add oil & green onions to your noodles after they’re done cooking so it doesn’t stick together.
3. The green onions aren’t necessary but I like to add it.
Prepare the Veggies
1. Cut up whatever veggies you like.
Cook the Shrimp
1. Cook the shrimp & let it rest for a little to cool down.
Make the Spring Rolls
1. Dip wrappers in warm water & make your spring rolls.
Serve
1. Serve with the fish sauce dressing in my previous video & enjoy.
