Ingredients

Shrimp and Rice
- 1 lb shrimp
- 1 tbsp butter
- 1 c long grain rice
- 2.25 c water
- 0.5 c canned tomatoes
- 0.5 c diced bell peppers
- 1.5 tbsp Old Bay
- 1 tbsp Old Bay
- 2 tsp parsley
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp chopped onion
- 1.5 tbsp Italian seasoning
- 1 lemon

Directions

Prepare the Rice
1. In a medium skillet set to medium high heat add butter.
2. Once your butter has melted add rice, Old Bay, chopped onion and Italian seasoning.
3. Stir everything together so the rice gets evenly coated with all the seasoning.
4. Continually stir and let the rice cook for about 1 to 2 minutes or until you can smell the seasonings.
5. After 1 to 2 minutes of the dry rice in the skillet add water, tomatoes, bell peppers and garlic.
6. Stir together and bring to a boil. Once your rice has come to a boil, lower the temperature to medium low heat and cover. Cook rice on medium-low heat for about 12 min.
7. Depending on the moisture level you may need to add extra water at this point. If the rice is still dense add the extra water and lower your cooking temp.
Prepare the Shrimp
1. While your rice is cooking, season your shrimp with Old Bay, parsley, paprika and onion powder. Mix well.
2. After about 10 minutes of the rice cooking, add your seasoned shrimp to the top of the dish.
3. Cover and let simmer until the rice is finished and the shrimp is cooked.
4. Finish with fresh parsley and lemon wedges on top. Give a squeeze of lemon for an extra bite of zest.
5. Enjoy!
Notes
1. Check your rice periodically. Depending on the temperature of your skillet you may need to add about a fourth a cup of water extra. Taste your rice to make sure that it is fully cooked. Continually stir the rice at the beginning to make sure that it doesn't burn once you add seasonings to it. The shrimp only takes a few minutes to cook so make sure you put that in right at the end once the water is at the end of reduction.
