Ingredients

Shrimp Fried Rice
- 8 oz Shrimp
- 2 c Rice, day-old cold cooked
- 0.5 Onion, diced
- 1 c carrots and peas
- 1 Scallion, chopped
- 2 Eggs, beaten
- 4 tbsp Cooking oil, divided
- 2 tbsp Light soy sauce
- 2 tbsp hot sauce or sriracha

Directions

Prepare the eggs
1. In a wok, heat 2 tbsp oil and add beaten eggs.
2. Stir and cook until no more liquid is left.
Prepare the shrimp
1. In the same wok, add 1 tbsp oil and shrimp.
2. Cook until they turn pink.
3. Transfer out and set aside.
Prepare the rice
1. Heat the wok again, add the remaining tbsp of oil, onion, and scallion whites.
2. Cook until the onions turn translucent.
3. Add the rice, soy sauce, and hot sauce.
4. Mix well.
5. Then add the cooked shrimp and frozen carrots and peas.
6. Stir well.
Final steps
1. Add the eggs and finally scallion greens.
2. Mix everything for another minute.
