Ingredients

Shrimp Fried Rice
- 16 Jumbo shrimp
- 2 Eggs
- 3 tbsp crushed garlic
- 1 c Green onion, chopped
- 0.25 c soya sauce
- 2 tbsp Sesame oil
- 4 tbsp Cooking oil
- 2 c mixed veggies
- 4 c jasmine rice
- Kosher salt
- Black pepper

Directions

Marinating the Shrimp
1. In a bowl, take raw jumbo shrimp and marinate it in garlic and soy sauce.
2. Set it aside.
Cooking the Eggs and Shrimp
1. Heat up the wok with oil and fry 2 eggs with a pinch of salt.
2. Remove it from the pan and then add marinated shrimp.
3. Don’t overcook it or the texture will become too chewy. Unless you like “tire” consistency!
4. Once you remove the cooked shrimp, set it aside.
Preparing the Fried Rice
1. Add sesame oil, more garlic, and green onion to the wok.
2. Sauté for 30 seconds.
3. Then add veggies, rice, and soy sauce.
4. Mix well.
5. Finally, add back the shrimp and egg.
6. Cover and let it cook on low heat for 5 minutes.
Final Touches
1. For the final touch, throw in additional green onion.
2. It comes out so freaking delicious.
