Ingredients

The Guac
- 3 Avocados, soft
- 0.5 Red onion, diced
- 1 Roma tomato
- 1 Lemon, big squeeze
- Salt, to taste
Spanish Rice
- 0.5 Onion, finely diced
- 1 jalapeno
- 2 tbsp Oil
- 0.75 c White rice
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Salt
- 0.25 c Tomato sauce
- 2 c Chicken stock, hot
Cheese Sauce
- 2 tbsp Butter
- 2 tbsp Onion, diced
- 1 Serrano pepper
- 2 tbsp Flour
- 2.5 c whole milk
- 1.5 c Cheddar cheese
- 8 oz American cheese
shrimp
- 12 shrimp
- spicy seasoning of your choice

Directions

For the guacamole
1. In a molcajete or bowl if you don’t have one add 3 soft Avocados, half a diced red onion, 1 diced Roma tomato, a big squeeze of lemon juice and salt to taste.
For the Spanish rice
1. Bring a skillet up to medium heat and add half a finely diced onion, and one diced jalapeño and soften them.
2. Next add about 2 tablespoons more oil and add 3/4 cup white rice.
3. Add 1 teaspoon paprika, 1 teaspoon cumin, and 1 teaspoon salt.
4. Toast the rice until starting to brown and then add 1/4 cup tomato sauce and 2 cups of hot chicken stock.
5. Bring to boil and then cover with a lid.
6. Reduce to a simmer for 10 minutes.
7. After 10 minutes cut the heat and let it sit for 5 more minutes still covered.
For the cheese sauce
1. 2 tablespoons butter medium heat.
2. Add about 2 tablespoons diced onion and one diced Serrano pepper.
3. Cook until soft.
4. Add 2 tablespoons flour and then 2.5 cups of whole milk.
5. Whisk until smooth then add about 1.5 cups of cheddar and 8oz of American cheese.
6. Allow to melt and smooth out.

1. over high medium-high heat add a little oil and your shrimp. cook for 45-60 seconds on each side or until 145F internal
