Ingredients

Main Ingredients
- 20 Shrimp, extra large, peeled and deveined
- 0.5 Green bell pepper, diced
- 0.5 Yellow bell pepper, diced
- Andouille smoked sausage
- 5 bacon strips
- 1 tsp Old bay seasoning
- 1 tsp lemon pepper
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Smoked paprika
- 0.25 tsp Cayenne pepper, optional
For the Grits
- 3 c water, or chicken broth
- 1 c Heavy cream
- 2 tsp all purpose seasoning
- 0.5 c shredded cheese, I used smoked Gouda
Once Grits are Done
- 0.25 c Heavy cream
- 1 tbsp Butter

Directions

For the bacon, smoked sausage, and shrimp
1. Add bacon to a pan and fry until crispy.
2. Remove some of the bacon fat then add the smoked sausage to the same pan and brown it.
3. Set to the side.
4. Season the shrimp then cook in the same pan for 1-2 minutes per side.
5. Remove from the pan.
6. Add in the bell pepper and sauté until tender then remove about 1/3 of the pepper for garnish later.
7. Pour in the heavy cream lightly season with garlic powder, lemon pepper and smoked paprika.
8. Add Parmesan cheese.
9. Reduce heat and simmer while preparing the grits.
For the grits
1. Bring the water (or chicken broth), heavy cream and butter to a boil.
2. Season with an AP seasoning or the blend above. (If using chicken broth go light on seasoning)
3. Whisk in the 5 minutes grits but cook for about 10 minutes stirring constantly to prevent lumps.
For the cream sauce
1. While the grits are cooking add about 3/4 of the bacon smoked sausage and shrimp to the cream sauce that’s simmering.
2. Save 1/4 of each to top the grits with.
For the final assembly
1. Once the grits have thickened add in the shredded cheese and stir until melted.
2. Now add in more heavy cream and butter to make creamy.
3. Spoon the grits onto a bowl or plate.
4. Top with the cream mixture then arrange the shrimp, smoked sausage, bacon and peppers on top.
5. Serve immediately and enjoy.
