Ingredients

Ramen
- 8 oz ramen noodles
- 2 c Chicken Broth, unsalted or water
- 4 oz firm tofu
- 1 tbsp Oil
Salt Flavoring Tare
- 1 c Hot water
- 1 tsp Hondashi Bonito Soup Stock
- 4 tsp Salt
- 2 tbsp sake
- 1 tsp Mirin
- 1 tsp Light soy sauce
Tofu Chashu Marinade
- 0.25 c Light soy sauce
- 1 tbsp sake
- 1 tbsp Mirin
- 0.333 c water

Directions

To make the salt flavoring tare
1. Combine hot water, Hondashi, salt, sake, mirin, and light soy sauce in a saucepan.
2. Bring it to a boil and set it aside.
For the tofu preparation
1. For 2 servings, cut about 1/4 of a block of firm tofu into thin slices.
2. Pat dry with paper towels.
3. Add oil to the skillet and fry the tofu until both sides are brown.
4. If needed, drizzle some marinade sauce to deepen the flavor.
For the ramen noodles
1. Add 8 oz of ramen noodles to a pot of boiling water, and cook for 3 minutes or according to the package instructions.
To assemble the dish
1. Add 2 -4 tbsp of tare to a bowl and 1 cup of unsalted hot chicken broth.
2. Depending on how salty you like the broth, taste it and add more or less if needed.
3. Add the cooked ramen noodles and top it off with tofu chashu, wood ear mushrooms, scallion curls, and ramen egg.
4. You can always customize and add your favorite toppings.
