Gnocchi
- 9 oz gnocchi
- 2 c Cherry tomatoes
- 0.5 Onion, finely diced
- 2 clove Garlic, finely diced
- 2 tbsp Olive oil
- 1 tbsp balsamic glaze
- 0.25 c Nutritional yeast
- 0.25 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste

- 0.5 c Parsley, chopped, or basil

Directions

Preparation
1. To begin, you'll need to preheat your oven to 395 degrees F.
2. Next, add the cherry tomatoes, gnocchi, onion, and garlic to a lightly greased sheet pan or an oven-proof dish.
3. Season with salt and pepper.
4. Drizzle with olive oil and a balsamic glaze.
5. Ensure that everything is well coated.
Baking
1. Bake in the oven for around 20 minutes or until the cherry tomatoes burst open and the gnocchi have taken on some color.
2. Stir halfway through the baking process.
Final Touches
1. Once done, sprinkle the nutritional yeast over the gnocchi for a cheesy flavor.
2. Add more balsamic glaze if you like.
3. Finally, garnish with fresh herbs, such as parsley and/or basil.
