Ingredients

- 4 lbs chicken thighs & breasts
- 0.25 c Olive oil
- 0.333 c Lemon juice
- 10 clove Garlic, minced
- 4 tsp Salt
- 1.5 tsp Cardamom
- 1.5 tsp Paprika
- 1 tsp Cumin
- 0.5 tsp crushed red pepper
- 0.5 tsp Cinnamon

Directions

1. Combine the chicken with the marinade ingredients until everything is well coated.
2. Cover the bowl and place in the refrigerator to marinate for at least an hour or up to 24 hours.
3. Preheat the oven to 400°F.
4. Tightly pack the chicken in a loaf pan and roast for 50-60 minutes, or until the chicken reaches an internal temperature of 165°F.
5. Remove the chicken from the oven and allow it to rest for 5 minutes.
6. Place a cutting board over the loaf pan and flip over. Some juices from the chicken may drip.
7. Use a sharp knife to thinly slice the chicken from top to bottom.
8. Serve with rice or in a pita with pickles, tomatoes, lettuce and garlic sauce or tahini sauce.
