Ingredients

Seasoning the Tuna
- 1 lb ahi tuna
- 2 tbsp White sesame seeds
- 2 tbsp Black sesame seeds
- Salt, to taste
- cracked szechuan pepper
Ginger Dressing
- 2 inch Ginger, grated
- 0.5 Shallot, grated
- 2 Garlic cloves, grated
- 1 tsp ume plum vinegar
- 1 tbsp Mirin
- 2 tsp Sesame oil
- 1 tbsp Olive oil
- Salt, to taste
- Black pepper, to taste
- 1.5 tbsp Hot honey
Toppings and Greens
- 4 oz butter lettuce, or green of your choice
- Pomegranate arils, of a whole pomegranate
- 2 Shallots, sliced thin
- 1 cup edamame

Directions

Cooking the Tuna
1. Season the tuna on both sides with salt and pepper 30 minutes prior to cooking
2. Cover tuna in neutral cooking oil
3. Combine white and black sesame seeds on a small plate
4. Coat all sides of the tuna in the sesame seeds
5. In a nonstick pan on medium high heat, sear the tuna for 45-60 seconds per side and remove to cool then slice into 1/2 to 1 inch slivers.
Preparing the Dressing
1. Grate the ginger, shallot, and garlic into a small mixing bowl
2. Add in vinegar, sesame oil, olive oil, mirin, and hot honey. mix well to combine
3. Salt and Pepper to taste
Frying the Shallots
1. Slice 2 shallots as thinly as possible. A mandolin would help here
2. Place in a pan and pour room temperature neutral cooking oil in until fully submerged
3. Bring oil up to 350 degrees F and cook until just light brown and remove to drain on paper towel. These will continue to brown as they cool
Building the Salad
1. Lay your tuna on your lettuce in beautiful fashion then go crazy with the toppings and dressing!
