Ingredients

Pastry Rolls
- 0.5 package yufka dough
- 1 bunch Kale, chopped
- 2 clove Garlic, minced
- 1 tbsp Olive oil, plus extra for frying
- 0.25 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste
- 0.5 c Cheese, grated, plant-based for a vegan recipe
Herbed Yogurt Sauce
- 1 c plant-based yogurt
- 0.5 c Parsley, fresh, finely chopped
- 0.5 c Mint, fresh, finely chopped
- 0.5 Lemon, juiced
- 0.25 tsp Salt
- 0.25 tsp Pepper
- drizzle Olive oil

Directions

Prepping the filling
1. Heat olive oil in a pan over medium-high heat.
2. Add the garlic and cook until fragrant.
3. Stir in the chopped kale and sauté until wilted and tender.
4. Season with salt and pepper.
Preparing the dough and filling
1. Unwrap your yufka or phyllo dough, keeping it covered with a damp cloth to prevent drying.
2. Place 2-3 tablespoons of the filling along the bottom side of the dough triangle.
3. Fold the dough corner over the filling, creating a tight fold.
4. Tuck in the sides for a secure closure.
5. Roll up the dough tightly.
6. Seal the end with a dab of water. The result should look similar to a cigar.
Cooking the rolls
1. Lightly spray your spring rolls with oil and air-fry for approximately 7 minutes (depending on your air-fryer) until golden brown and crispy.
2. Alternatively, bake them in the oven or deep fry the rolls in batches until golden brown.
For the yogurt sauce
1. Mix all sauce ingredients and enjoy!
