Ingredients

Salad
- 1 c couscous
- 1 c Hot water
- 1 tbsp Olive oil
- 0.5 lb chicken sausage
- 1 c Frozen peas
- 0.25 c Fresh parsley, chopped
- 3 Scallions, sliced
- 1 Jalapeño, sliced (optional)
- 0.333 c Pistachios, chopped
- 0.5 c feta
- 1 Lemon, juiced
- 2 tsp Kosher salt
- 1 tsp Black pepper
Dressing
- 2 tbsp Fresh lemon juice
- 1 tbsp whole grain mustard
- 1 clove Garlic, finely chopped
- 1 tbsp Honey
- 0.5 c Olive oil
- pinch kosher salt and black pepper

Directions

To make the salad
1. Place the couscous in a large bowl and pour in the hot water.
2. Cover and set aside.
3. Heat a large skillet and add the olive oil and sausage.
4. Break up and cook until golden brown, about 8-10 minutes.
5. Stir in the peas and remove from heat.
6. Uncover couscous and fluff with a fork.
7. Add in the parsley, scallions, jalapeño (if using), pistachios, feta, lemon juice, salt, pepper and the sausage and peas.
8. Give it a stir and set aside.
To make the dressing
1. Combine all of the ingredients in a jar and seal tightly with lid.
2. Shake vigorously and then pour over salad right before serving.
3. Toss and enjoy.
