- 1.25 cups gluten free flour
- 0.5 tsp Baking powder
- 0.5 tsp Baking soda
- 0.25 tsp pink Himalayan salt
- 0.5 cup Unsalted butter, room temperature
- 0.5 cup Brown sugar, packed
- 0.333 cup Granulated sugar
- 1 large Egg
- 0.5 tsp Pure vanilla extract
- 0.75 cups Semi-sweet chocolate chips
- 0.5 cup caramel bits
- 0.5 tbsp pink Himalayan salt

Directions

Preparation
1. Preheat the oven to 350°F.
2. In a medium bowl, mix together the gluten free flour, baking powder, baking soda, and salt.
3. In a stand mixer with your paddle attachment, cream together the butter, brown sugar, and granulated sugar.
4. Add egg and vanilla extract, mix until combined well.
5. Slowly add in the flour mixture until everything is well combined.
6. With a spatula, fold in the chocolate chips and caramel bits.
7. With a 2 tbsp cookie scoop, scoop dough onto baking sheet about 2 inches apart.
8. Press extra caramel bits into the tops of each dough ball.
Baking
1. Bake for 9-12 minutes, or until the caramel is melted and the bottoms of the cookies are golden brown.
2. Remove from the oven and immediately sprinkle a tiny pinch of salt onto each cookie.
