Ingredients

- 1.25 lb salmon fillet
For Marinade
- 0.25 cup Light soy sauce
- pinch Sugar
- 0.25 cup Red onion, thinly sliced
- 0.25 cup Scallion, thinly sliced
- 2 Tbs kimchi furikake rice seasoning
- 1 Tbs Lime juice, fresh squeezed
- 1 Tbs Ginger, freshly grated
- 0.5 tsp Sesame oil
- 2 Tbs Cilantro, freshly picked
- pinch Red pepper, flakes
For Rice
- 1 cup jasmine rice
- 1.5 cup Water
- 1 tsp fine sea salt

Directions

1. In a bowl combine soy sauce with the sugar and dissolve, add the salmon and mix.
2. Add the remaining ingredients except the cilantro and red pepper flakes.
3. Mix well, cover and chill for an hour.
4. Place rice in a bowl and cover with cold water, let stand 5 minutes then strain in a mesh strainer.
5. Bring 1 1/2 cups water to a boil in a saucepot.
6. Stir in the rice and fine sea salt.
7. Bring to a low simmer and cook for 15 minutes.
8. Remove from heat and let rest 5 minutes, fluff and keep warm.
9. To serve add cilantro and red pepper flakes to the salmon, gently toss and divide between 4 bowls, serve with jasmine rice.
