Ingredients

Main Ingredients
- 8 oz lox or smoked salmon
- 1 can Chickpeas, drained, rinsed, and towel dried
- 1 tbsp olive or avocado oil
- 0.5 tbsp everything but the bagel (EBTB) seasoning
- 1 tsp arrowroot starch, corn starch or potato starch
- 0.5 cup Red onion
- Arugula, + a drizzle of olive oil + a squeeze of lemon + salt and pepper
Garnish
- Capers
- Fresh dill, chopped

Directions

Preparation
1. Preheat your oven to 400.
2. Add your avocado oil, EBTB seasoning, and arrowroot starch, or corn starch or potato starch (optional) to a bowl and whisk to combine.
3. Add in your chickpeas and toss until evenly coated.
4. Taste and add more salt if needed.
5. Add your chickpeas to a sheet pan and roast in the oven for 18-20 minutes.
Assembling the Bowl
1. Assemble your bowls with arugula, a drizzle of olive oil, a squeeze of lemon, salt and pepper, a few slices of lox, pickled red onion, EBTB chickpeas, capers, and fresh dill.
