Salad
- 3 tbsp cashew nuts
- 3 tbsp Red onion, marinated in salt and lemon juice
- 0.25 c pickled red cabbage
- 1.5 c dino kale
- 0.5 c grilled corn
- 1 Carrot, peeled, chopped into cubes
- 1 Red bell pepper, chopped into cubes
- 1 c boiled quinoa
Dressing
- 0.25 c Extra virgin olive oil
- 2 tbsp Lemon juice
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste

Directions

For the salad jar preparation
1. Fill the jars with the dressing and layer with the veggies.
2. Feel free to use any other veggies you have in the fridge which go well with the rest.
3. Seal with the lid and keep in the fridge for a maximum of 3-4 days.
4. Once you are ready to eat, flip the jar over and enjoy!
