Ingredients

Cake
- 4 Eggs, separated at room temp
- 0.75 c Sugar
- 1.333 c Flour
- 2 tbsp milk powder
- 1.5 tsp Baking powder
- 0.75 tsp Salt
- 0.333 c Milk
- 1 tsp vanilla
Milk Mixture
- 10 oz sweetened condensed milk
- 10 oz evaporated milk
- 0.25 c Heavy cream
- 0.5 tsp cardamom powder
Topping
- 1.5 c Heavy cream
- 1 tbsp Powdered sugar

Directions

1. Preheat oven to 350F and line baking pans (9” round pans if double layered, or 9x13” sheet pan if single layered).
2. Whisk together the dry ingredients except the sugar.
3. Add 1/2 cup sugar to egg yolks and whisk for 3-5 min until light and frothy.
4. Fold in half the dry ingredients carefully, then fold in the milk and vanilla, and the remaining dry ingredients. Try not to overmix the batter.
5. Whisk the egg whites with remaining 1/4 cup sugar until stiff peaks form.
6. Add 1/3 of the egg whites to the remaining batter and gently fold to loosen the batter.
7. Then fold in the remaining egg whites.
8. Divide batter into your pans and bake for about 15-18 min until a toothpick comes out clean (time may vary based on your pan size).
9. Place the cakes on a wire rack and let them cool completely.
10. Whisk together the milks, cream and cardamom powder in a bowl.
11. Place the cakes on deep sheets / plates and gently poke holes in them with a fork.
12. Slowly drench them with the milk. It will appear at first that there’s too much milk but the cakes will soak it, so keep adding more with time.
13. Place the cakes in the fridge and let them cool for about 4 hours.
14. Whip the whipping cream for the decoration.
15. Layer your cakes with whipped cream, taking care when handling them, and let cool again for 30 min.
16. Serve and enjoy.
