Ingredients

Main Ingredients
- 3.5 oz rice noodles
- 7 oz shiitake mushrooms, thinly sliced
- 2 clove Garlic, finely chopped
- 2 tbsp Soy sauce
- 1 tbsp Olive oil
- 1 Carrot, cut into ribbons with a peeler
- 0.5 Cucumber, cut into ribbons with a peeler
- 1 c Red cabbage, thinly shaved
- 1 Lime, juiced
- 1 Avocado, halved, sliced
Peanut Dressing
- 0.333 c Peanut butter, without additives
- 0.333 c Orange juice, freshly squeezed
- 1 tbsp Rice vinegar
- 1 tbsp Soy sauce, or tamari
- 1 tbsp Ginger, peeled, grated
Garnish
- 1 tbsp black sesame
- 1 stalk of spring onion
- 0.5 c Cilantro
- 1 Lime, halved

Directions

For the rice noodles
1. Soak the rice noodles in hot water for about three minutes.
2. Rinse with cold water.
For the red cabbage
1. Thinly shave the red cabbage.
2. Massage it with lime juice until it becomes soft. Set it aside.
For the mushrooms
1. Heat olive oil on medium-high heat.
2. Sauté garlic for a minute.
3. Add the sliced mushrooms and roast for another minute.
4. Add soy sauce (or tamari) and lime juice.
5. Cook on high heat until soft and seared.
For the peanut sauce
1. Blend all the ingredients in a small blender.
For the final assembly
1. Arrange all the ingredients in a bowl.
2. Enjoy with the creamy peanut dressing.
