Ingredients

Cake Ingredients
- 2.5 cups All purpose flour
- 1.333 cups Sugar
- 2.25 tsp Baking powder
- 0.25 tsp soda
- 0.75 tsp Salt
- 2 Eggs
- 1 tsp vanilla
- 0.667 cups Vegetable oil
- 0.75 cups Milk, plus 2 tsp vinegar + 1 tbsp red food color
- 0.25 cups boiling water, plus 1/2 tsp coffee (optional)
- 4 tbsp Cocoa powder
- 0.25 cups Milk, to soak
Frosting
- 450 g Cream cheese
- 113 g Unsalted butter
- 350 g icing sugar
- 1 tsp vanilla
- pinch Salt

Directions

Preparation of Cake Pans and Preheating the Oven
1. Preheat oven to 350F and prep two 9” cake pans.
Mixing Dry Ingredients
1. Mix flour, sugar, salt, baking powder and soda in a large bowl.
Preparing the Wet Ingredients
1. Separately mix milk, vinegar and red food color.
2. Add the milk, eggs and oil to the dry ingredients and whisk until combined.
Adding Cocoa and Coffee
1. Add hot water to cocoa powder and coffee, whisk and ensure there are no lumps.
2. Add to the cake batter and gently mix until combined.
Baking the Cake
1. Divide batter between two pans and bake for 25-30 min until a toothpick comes out with moist crumbs.
Preparing the Frosting
1. Whip cream cheese and butter for 5 min.
2. Then add sugar 1 cup at a time and whisk for a few minutes to create a light and fluffy frosting.
Assembling and Decorating the Cake
1. Level cakes and save the excess to create crumbs.
2. Divide each cake into 2 layers.
3. Soak each layer lightly with milk, cover in frosting and repeat.
4. Decorate with crumbs.
5. Chill for 1-2 hours before enjoying!
