Ingredients

- 3 Tbs Olive oil
- 5 clove Garlic, chopped
- 3 guajillo peppers
- 0.5 cup White wine
- 1 Tbs Lime juice
- pinch Salt
- 600 g red snapper loin (4 pieces of 150g each)
- 5 twig Fresh thyme

Directions

1. Heat 2 tbsp of oil in a pan. Add the garlic and guajillo. Fry for a few minutes until they start to brown. Pour ¼ cup of white wine and the lime juice. Cook for 5 minutes until the sauce thickens and season with salt. Place to the side.
2. Season the red snapper with salt. Heat the remaining tbsp of olive oil in a pan and sear the red snapper loins on both sides. Add the remaining white wine and thyme. Cover the pan with a lid and cook for 6 minutes or until the loins are fully cooked.
3. Share and enjoy.
