Ingredients

For the simple marmalade
- 0.75 cup Raspberries, washed and disinfected
- 0.25 cup Orange juice
- 1 Tbs Chia seeds
For the pudding
- 1 cup skim milk
- 0.5 cup Coconut milk
- 1 tsp Vanilla extract
- 0.5 Tbs Maple syrup
- 0.33333333333333331 cup Chia seeds
To serve
- 4 tsp Peanut butter
- 4 Raspberries, washed and disinfected

Directions

For the simple marmalade
1. In a pan, add the raspberries and orange juice. Cook on medium heat until it bubbles, lower the heat and cook while stirring constantly for 2 minutes. Remove from the fire and stir in the chia seeds.
2. Split the marmalade in 4 cups or small jars and refrigerate.
For the pudding
1. In a bowl, mix all the ingredients and refrigerate for at least 1 hour so the chia seeds thicken the pudding and it’s chilled.
To serve
1. Serve the chia pudding in the jars with marmalade.
2. Add a tsp of peanut butter on top and raspberries cut in quarters.
3. Enjoy cold
