- 0.5 Small Zucchini, spiralized
- 1 Carrot, spiralized
- 0.25 Cucumber, spiralized
- 0.5 small beet
Garnish
- 0.25 c spring onion
- 1 tbsp toasted peanuts
- 2 tbsp toasted sesame seeds
Dressing
- 0.25 c Tahini
- 1 Lime, juiced
- 0.25 tsp Salt
- water, as needed

Directions

Preparing the Noodles and Vegetables
1. Use a vegetable spiralizer to create the veggie noodles or a julienne cutter or peeler as alternatives.
2. Once the rice noodles are prepared according to the package instructions, toss them with the spiralized vegetables in a bowl.
Preparing the Dressing
1. In a small blender, combine tahini, lime juice, salt, and water, as needed.
2. Drizzle the dressing over the noodle and vegetable mixture, and toss until everything is well coated.
