- 4 Chicken breasts, boneless, skinless
- 1 Red bell pepper, sliced
- 1 orange bell pepper, sliced
- butternut squash cubes
- 1 Small red onion, sliced
- 1 Small Zucchini, sliced (or broccoli or brussels)
- 1 small yellow squash
- vegetables
- 2 tbsp Olive oil
- 1 tbsp Italian seasoning
- Salt, to taste
- Pepper, to taste

- chopped parsley
- Lemon wedges

Directions

Instructions
1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
2. In a small bowl, whisk together the olive oil, Italian seasoning, salt, and pepper.
3. Chop the chicken into cubes and season with oil and spices.
4. Arrange the sliced peppers, onion, zucchini (or broccoli for Brussels) and yellow squash around the chicken.
5. Brush the veggies with the remaining oil mixture.
6. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the veggies are tender and slightly charred.
7. Remove the sheet pan from the oven and let it cool for a few minutes.
8. Serve with brown rice and garnish with chopped parsley and lemon wedges, if desired.
9. Enjoy.
