Ingredients

Quinoa and Vegetables
- 1.5 c cooked quinoa
- 1 c shredded carrots
- 0.25 c chopped fresh parsley
- 1 Onion, finely chopped
- 2 clove Garlic, finely chopped
- 1 tbsp Olive oil
- 0.5 tsp Salt, or to taste
- 0.25 tsp Black pepper, or to taste
Psyllium Husk Egg Replacement
- 0.5 tsp psyllium husk powder
- 3 tbsp water

Directions

Prepare the vegetables
1. Heat olive oil over medium heat and sauté onion with salt until translucent.
2. Add garlic and carrot.
3. Cook for 1-2 minutes and season to taste.
4. Set aside.
Prepare the psyllium husk egg replacement
1. Prepare the psyllium husk egg replacement by mixing the powder with water.
Combine the ingredients
1. In a bowl combine the quinoa with the veggie mixture and the psyllium husk “egg”.
2. Mix well until all ingredients are evenly distributed.
3. Let sit for 5-10 minutes.
Form and cook the patties
1. Form mixture into patties and roast them with oil in a pan for 2 minutes on each side.
2. If the mixture is too wet, add some more of the psyllium husk powder or optionally flour.
3. Serve warm with your favorite dipping sauce.
