Ingredients

Pasta
- 8 oz Linguine
- 0.5 purple cauliflower
- 1 c oat milk, unsweetened
- 0.5 c Cashews, raw, soaked in water
- 2 clove Garlic, finely chopped
- 2 Lemons, juiced
- 1 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 1 tbsp Olive oil

Directions

Preparation of Cashews and Cauliflower
1. Begin by soaking the cashews in hot water for about an hour. You can also boil them for a few minutes until soft.
2. Chop the cauliflower into small florets. Remove the white parts as much as possible.
3. In a pan, heat olive oil over medium-high heat.
4. Sauté the garlic for about 30 seconds.
5. Now add the cauliflower florets and roast them for about 5 minutes until they start to soften. You can add a bit of water and lemon juice if the pan needs some liquid.
6. Let it cool for a bit to be able to blend it.
Cooking the Pasta
1. Meanwhile, cook your pasta al dente. Save some of the salted cooking water.
Preparing the Sauce
1. In a blender, combine oat milk, cashews, juice of 1 lemon, salt, pepper, and most of the cauliflower. Be sure to save a few florets to garnish the plate.
2. Blend until it has reached a creamy consistency.
Combining and Serving
1. Pour the sauce back into the pan, just heat lightly, and add the pasta to the sauce with a little bit of the pasta water.
2. Toss to combine.
3. Now drizzle the pasta with more lemon juice, and it will turn pink!
4. Garnish with cauliflower florets and cracked pepper.
5. Enjoy!
