Pumpkin Spice Waffles
- 1 c Pumpkin Puree
- 2 Eggs
- 1 tsp Vanilla extract
- 1 tsp pumpkin spice extract
- 1 tbsp Maple syrup, or honey
- 1 c Almond flour
- 1 tsp Baking powder
- 1 tsp pumpkin pie spice
- 0.25 c Milk, dairy or plant-based
- Coconut oil, or cooking spray for waffle iron
Maple Syrup Topping
- 1 c Pure maple syrup
- 2 tbsp Pumpkin Puree
- 1 tsp pumpkin pie spice

Directions

Instructions for waffle preparation
1. Preheat your waffle iron according to its instructions.
2. In a mixing bowl, combine the pumpkin puree, eggs, vanilla extract, and maple syrup. Mix well.
3. Add the almond flour, baking powder, pumpkin pie spice, and milk to the pumpkin mixture. Mix until just combined. The batter should be slightly thick.
4. Lightly grease the waffle iron with coconut oil or cooking spray.
5. Pour the batter onto the preheated waffle iron and cook according to the manufacturer’s instructions.
6. Once cooked, remove the waffles from the iron and serve with your preferred toppings.
Instructions for pumpkin-infused maple syrup
1. In a small saucepan, combine maple syrup, pumpkin puree, and pumpkin pie spice.
2. Warm the mixture over low to medium heat for about 5 minutes, stirring occasionally.
3. Remove from heat and let it cool for 10-15 minutes.
4. Strain the syrup through a fine-mesh sieve or cheesecloth.
5. Store the pumpkin-infused maple syrup in a sealed container in the refrigerator for up to 2 weeks.
