Ingredients

Pasta
- 1 lb Pasta, shells
Evaporated Milk
- 1 12oz can evaporated milk
Pumpkin Puree
- 15 oz Pumpkin Puree
Butter
- 2 tbsp Butter
Spices
- 0.25 tsp Nutmeg
- 0.25 tsp Sage
Cheese
- 8 oz Sharp cheddar, freshly grated
- 0.5 c Parmesan cheese
Garnish
- Parsley, freshly chopped

Directions

Step 1
1. Salt a large pot of water, bring it to a boil and cook your shells till al dente. (About 8 minutes).
Step 2
1. Melt your butter in a large pan, and add your evaporated milk. Once it’s simmering add your pumpkin purée and mix very well till it’s fully incorporated.
Step 3
1. Add your nutmeg & sage and mix well. Once it’s smooth - add your cheeses and mix until melted. Lots of mixing!
Step 4
1. Reserve 1 cup of pasta water and then add your al dente shells to the pan & mix well. If it’s too thick add a bit of pasta water until you reach your desired consistency.
Final Step
1. Lastly garnish with some fresh chopped parsley and enjoy!
