Wet
- 2 flax eggs
- 0.5 c Pumpkin Puree
- 0.25 c Coconut sugar
- 0.25 c Maple syrup
- 0.5 c Almond butter
- 1 tsp Vanilla extract
- 0.25 c Coconut oil, melted
- 0.25 c plant milk
Dry ingredients
- 1.5 c Rolled oats
- 1.25 c oat flour
- 1 tsp Baking powder
- pinch Salt
- 0.75 c Chocolate chips
- 0.5 tsp pumpkin spice

Directions

Preparation of flax eggs
1. Make your flax eggs by mixing flax with water.
2. Let sit for at least 5 minutes until thickened.
Preheat the oven
1. Preheat oven to 350 degrees.
Mixing the ingredients
1. Add all wet ingredients to a bowl and mix until just combined.
2. Pour in dry ingredients except for chocolate chips.
3. Mix again until just combined.
4. Lastly fold in chocolate chips.
Preparing the baking dish
1. Pour dough and spread evenly into an 8x8 baking dish lined with parchment paper.
Baking the bars
1. Bake bars for 20-28 minutes. I baked mine for 25 minutes, a knife should come out mostly clean when finished cooking.
Cooling and storage
1. Let bars cool for 15 minutes, slice and enjoy.
2. Store the leftover bars in a sealed container in your fridge for up to 5 days, or in your freezer for months.
