Ingredients

Main Ingredients
- 8 slider buns
- 9 oz Oyster mushrooms
- 2 tbsp Soy sauce
- 1.5 tbsp Olive oil
- 2 clove Garlic, minced
- 1 tsp Paprika, smoked
- 1 tsp Cumin
- 0.25 c BBQ sauce
For the pickles
- 1 c White vinegar
- 1 c water
- 1 tbsp Sugar
- 1 tsp Salt
- 3 jalapeños
- 1 c Carrot, shredded
- 1 c cabbage

Directions

Making the pickles
1. In a small saucepan, combine the vinegar, water, sugar, and salt.
2. Bring to a simmer, then remove from heat and let cool.
3. Place the jalapeños, grated carrot, and shredded cabbage in separate jars.
4. Pour the cooled vinegar mixture over the veggies and let sit for at least 2 hours, or overnight. This can even be done a few days ahead.
Preparing the mushrooms
1. Tear the oyster mushrooms into thin strips.
2. In a large bowl, toss the mushrooms with olive oil, soy sauce, garlic, cumin, and smoked paprika.
3. Massage well and let marinate for 15 minutes or longer.
Searing the mushrooms
1. Heat oil in a cast-iron skillet, if available.
2. Cook the mushrooms over medium-low heat for about 15 minutes, until they are done and have crispy edges.
Assembling the sliders
1. Spread about 1/2 tbsp of BBQ sauce on the bottom halves of the slider buns.
2. Top with the mushrooms and pickles.
3. Serve immediately, and enjoy!
