- 3 Yellow onions
- 3 Bell peppers, can be just green or a variety of colors
- 1 bunch of cilantro
- 1 garlic bulb

Directions

Blending the Ingredients
1. Mix all the ingredients together in a blender.
2. If it’s too hard to mix, add a bit of water or oil until they start to blend.
3. If they don’t all fit, you can start a bit at a time or in batches.
Storing the Sofrito
1. Keep 1 jar or container in the fridge to use as needed, and freeze the rest.
2. You can either use various plastic containers or use ice cube trays to freeze the sofrito in portions.
3. Then move to a large ziplock bag, and save in the freezer.
Using the Sofrito
1. Sofrito is a very important ingredient in Puerto Rican cooking.
2. It’s used in rice, beans, stews, soups, meats, and more.
3. Depending on what I’m making, I use about 1 or 2 tbs at a time.
4. For Example, for 1 can of beans, I’d use 1 tablespoon, and for 3 cups of rice, I’d use 2 tablespoons.
Note
1. The optional ingredients, as these are harder to find in stores, would be added in addition to the other ingredients.
