Ingredients

Plantains
- 4 ripe plantains
- 2 Eggs, Beaten
Ground beef
- 1 lb Ground beef
- 0.333 c sofrito
- 0.5 c Tomato sauce
- 0.5 tsp Cumin
- 0.5 tbsp Onion powder
- 0.5 tbsp Garlic powder
- 0.5 tsp Dried oregano
- 0.125 tsp Black pepper
- adobo
- 1 tsp chicken bouillon
- 0.5 c beef broth

Directions

Ground beef (Picadillo)
1. Preheat oven to 375 degrees.
2. Add ground beef to skillet and cook on medium high heat until brown. Drain excess fat.
3. Add all other ingredients to the skillet. Stir to combine and cook for about 20 minutes on low heat.
4. Add broth or water as needed until potatoes are soft and tender. Remove from heat and set aside.
Assemble piononos
1. Spray a muffin tin with cooking spray. Mash a small piece of plantain in each muffin cup to form the base of the pionono. Place strips around to form a cup.
2. Fill each cup with ground beef and sprinkle with shredded cheese.
3. Drizzle some egg over each cup to bind everything together.
4. Bake at 375 degrees or until the cheese is melted. Serve with rice and beans and avocado salad.
