Ingredients

Pork Shoulder
- 8 lbs pork shoulder
- 8 Garlic cloves, cut into slices
- 6 tbsp sofrito
- 1 tbsp HR sazón
- 0.25 c HR adobo

Directions

Preparing the Pork
1. Using a knife, poke holes into the pork and insert the garlic slices.
2. Rub the adobo, sazón and sofrito all around the pork.
3. Cover and keep in your refrigerator overnight.
4. If you keep the skin on, rub some salt on top of the skin.
Roasting the Pork
1. The next day, preheat your oven to 300° F and cook covered for about 5 hours.
2. You can add ½ cup of water to the roaster to add some additional juices for later.
3. The internal temperature should be between 190°F-205°F.
4. The meat will fall apart tender when it is done.
5. For extra crunchy skin use your broiler but keep an eye on it to be sure it does not burn.
Final Steps
1. Remove from the oven, let it rest for 15 minutes.
2. You can use a large cutting board and with a sharp knife, start chopping the meat and place in a serving platter.
3. Add some of the remaining juices on top for extra juiciness and flavor.
