Ingredients

Taco Ingredients
- 5 Potatoes
- 2 clove Garlic, chopped
- Salt
- Pepper
- Paprika
- 0.5 c shredded cheese
- 1 tbsp Butter
- 0.25 c Heavy cream
- Corn tortillas
- cotija cheese
Chipotle Sauce
- 1 can Chipotle peppers, in adobo sauce
- 2 c crema
- 0.25 c water
- Cilantro
- 1 Lime
- Salt
- Garlic powder
- Dried oregano
Cabbage Slaw
- green cabbage
- Red onion, thinly sliced
- Cilantro, rough chopped
- 0.5 Lemon
- 0.5 tbsp ponzu sauce
- Salt

Directions

For the chipotle sauce
1. Put all ingredients for chipotle sauce into a food processor.
2. Taste & make adjustments as needed (ex: more cilantro or salt etc) keep in fridge until ready to serve.
For the cabbage slaw
1. Make cabbage slaw next.
2. Add all ingredients in a bowl & keep in fridge until ready to serve.
For the potato filling
1. Heat up a pot of salted water and bring to a boil.
2. While the water is heating up, clean, peel & cube potatoes.
3. Add potatoes into the boiling water and cook until soft.
4. Drain the potatoes and place in a mixing bowl.
5. Add all ingredients for the potato filling and mix well.
For assembling the tacos
1. Before assembling the tacos, wrap your corn tortillas in Saran Wrap or a wet paper towel & warm up in the microwave for about 30 seconds.
2. This is to prevent the corn tortillas from breaking when you make the tacos.
3. Add a spoonful of the mix in the center and seal the tacos with an egg wash or cornstarch & water.
4. Fry the potatoes until golden brown.
5. Once the tacos are ready, add the chipotle sauce, slaw, & cotija cheese on top.
