Ingredients

- 6 Eggs
- 2 lb Yellow Potatoes, small, chopped
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 0.25 c Fresh parsley, chopped
- 0.25 c Extra virgin olive oil

Directions

1. Place the eggs in a small pot and add enough water to cover them.
2. Bring to a boil over medium-high heat, then remove the pot from the heat, cover, and let the eggs sit for 10 minutes.
3. Remove the eggs from the hot water and let cool completely.
4. Place the potatoes in another large pot and cover with water.
5. Add salt and bring to a boil.
6. Reduce to a simmer and cook until the potatoes are fork tender, about 15 to 20 minutes.
7. Drain then set aside to cool.
8. Transfer the boiled eggs and potatoes to a large salad bowl.
9. Season with salt and pepper.
10. Add parsley and olive oil and gently toss to combine.
11. Serve warm or store in the fridge for a few hours before serving cold with pita bread, if desired.
