Ingredients

- 2 apples
- 2 Tbs Rosemary, chopped
- 1 Tbs Thyme leaves
- 0.5 cup Sunflower seeds, toasted
- 0.25 cup Blue cheese
- 0.33333333333333331 cup dates
- 0.25 cup Bacon, chopped and crispy
- 1 pork loin, approx. 2 kg

Directions

1. Pre-heat your oven to 180°C/350°F.
2. In a bowl, mix the apple, herbs, seeds, blue cheese, dates and bacon until fully incorporated. Season the pork loin with salt and pepper. Spread the stuffing in the pork loin and roll. Tie to prevent the loin from opening while baking. Heat the oil in a large pan and sear the pork loin on all sides. Transfer to a baking tray, cover with foil and bake for about an hour. Let it rest for 5 minutes before slicing.
3. Slice and serve with your favorite vegetables to the side.
