Ingredients

- 1 c Greek yogurt, room temperature
- 1 clove Garlic, chopped
- Lemon, juiced and zested
- Salt
- Pepper
- 2 Eggs
- Parmesan cheese
- Sourdough bread
Parsley Sauce
- 0.333 c flat leaf parsley
- 1 tbsp garlic mustard
- 2 tbsp Olive oil
- 1 clove Garlic, small
- 0.5 Jalapeño
- 1 tbsp Lemon juice
- Salt

Directions

Preparation
1. Set out Greek yogurt so it can get to room temperature.
For the Yogurt Mix
1. Add garlic, lemon zest, lemon juice, and salt to taste in the yogurt.
For the Parsley Sauce
1. Make your parsley sauce by adding all ingredients in a blender and mix until it’s emulsified.
2. Taste and make any necessary adjustments.
3. Strain the purée so you’re left with just the beautiful clump-free sauce.
For the Eggs
1. Poach your eggs or make them to your liking.
For the Toast
1. Toast your bread in some butter.
For the Final Assembly
1. Then in a bowl add the Greek yogurt, eggs, parsley sauce, Parmesan cheese, flaky salt, and pepper.
2. Serve with toasted bread and enjoy.
