Ingredients

For the sauce
- 2 cup Plums
- 1 morita pepper
- 0.5 cup Celery, sliced
- 0.5 cup Onion, chopped
- 2 Tbs Ginger, sliced
- 3 cup Water
For the tenderloin
- 0.5 cup Plums, chopped
- 0.5 cup Walnuts, toasted and chopped
- 0.5 cup Almonds, toasted and chopped
- 0.5 cup Green olives, boneless
- 0.25 cup terragon
- 6 thick slice Bacon, diced
- pinch salt and fresh black pepper
- 1 Pork tenderloin, approx. 3kg, open to stuff
- 2 Tbs Oil
To serve
- 3 cup Chambray potatoes, roasted
- 6 rosemary leaves, bay leaves or fresh herbs

Directions

For the sauce
1. Heat the oil in a medium pot, add the onion and celery. Cook until they sweat but don’t change color. Add the rest of the ingredients to the pot and bring to a boil until the plums hydrate and the water thickens, like a syrup. Transfer to the blender and blend until homogenous. Return to the pot and bring to a boil.
2. Keep warm to the side.
For the tenderloin
1. Pre-heat the oven to 180°C/350°F
2. In a bowl, mix the plums, walnut, almonds, olives and bacon.
3. Season the tenderloin with salt and pepper. Place some tbsp of stuffing on the center of the open loin and roll. Tie it to prevent it from falling apart during cooking. Heat the oil in a pan and sear the loin on all sides. Cover with foil and bake for an hour. After the hour, baste with its juices and bake uncovered for other 15 minutes or until golden.
To serve
1. Rest the loin for 5 minutes before serving. Lay the roasted potatoes and herbs in a plate and place the tenderloin on top.
2. Slice it in front of your guests and serve with the plum sauce.
3. Share and enjoy.
