Ingredients

For the pizza dough
- 5 cup Bread flour
- 2.25 cup Water, heated between 95-100 degrees)
- 1 Tbs Granulated sugar
- 1 Tbs Active dry yeast
- 2 Tbs Olive oil
- 1 Tbs Kosher salt
- Cornmeal
For the sauce
- 1 can san marzano tomatoes
- 1 Tbs Basil, fresh or ground
- 1 Tbs Honey
- 1 Tbs Granulated sugar
- 1 tsp Kosher salt
- 2 habanero peppers
- 1 pinch Baking soda
For the chicken
- 6 Chicken thighs, boneless and skinless
- 1 Tbs Kosher salt
- 1 Tbs Black pepper
- 2 Tbs Garlic powder
- 2 Tbs Onion powder
- 1 Tbs Smoked paprika
- 2 cup pineapples
- 1 Carrot, diced
- 4 Garlic, cloves
- 1 Yellow onion, chopped
- 2 Tbs Lemon juice
- 1 Tbs Red wine vinegar
- 1 tsp Kosher salt
- 1 Tbs Honey
- 1 tsp Granulated sugar
- 2 habanero peppers
- 0.5 cup Light brown sugar
Other toppings
- 2 cup Pepper Jack Cheese
- Fresh Mozarella Cheese
- 1.5 cup Cherry tomatoes
- 1 cup pepperoni

Directions

For the chicken
1. Season the chicken with the aformentioned seasonings
2. Place all of the marinade ingredients into a blender and pulse until liquified.
3. Place the marinade over the chicken and let it sit overnight.
For the pizza dough
1. Mix the flour, sugar, and salt into a bowl.
2. Take the water placing into a microwave safe dish, and heat until it reaches 95 degrees F, no more than 100 degrees F.
3. Once heated, add olive oil to the water and active yeast.
4. Stir until completely dissolved.
5. Let it sit covered until it activates.
6. Mix the dry ingredients in with the activated yeast mixture.
7. Knead until a smooth ball of dough is formed.
8. Take the dough and place it into a large greased bowl.
9. Cover it in plastic wrap and a warm towel and place in a warm environment (i.e. a preheated oven slightly cooled) for an hour to rise.
10. In a large heavy bottomed pot, add the sauce ingredients and let simmer down for about seven minutes.
11. After seven minutes, use an immersion blender to mix the ingredients to form a sauce.
12. If you do not have an immersion blender, simply place all of the ingredients into a blender and once pulsed, add to a saucepan to simmer.
13. Let the sauce simmer on low for about 25-30 minutes stirring it often.
14. Once an hour has passed, take the dough out and preheat your oven to 350 degrees.
15. In a large frying pan, place enough oil to coat the pan.
16. Add the chicken thighs and cook for about 4 minutes per side developing a crust on each side of the chicken.
17. Finish cooking in the oven for at least 20 minutes letting it rest out of the oven once completed.
18. Turn the oven on its highest setting for at least an hour to get as hot as possible.
19. Divide your dough into four equal pieces.
20. You can store your remaining dough covered in the fridge.
21. Roll out your dough or for the more traditional method, pull, press, and toss your dough to get it stretched out.
22. For best results, take a pizza stone or an old baking sheet and place it in the oven to get hot.
23. Once hot, take a pizza pan and coat it in butter spray and dust it with cornmeal.
24. Take the melted butter, garlic, and parsley that was placed in a small bowl and brush it on the crust.
25. Place the dough onto the pizza pan and cook for about 5 minutes or more depending on the level of crispyness you’d like.
26. Once slightly crispy, add the sauce, cheese, and toppings.
27. Bake in the oven for about 7 minutes or until it reaches your desired level of crispiness for the crust.
28. Brush the ends of the crust with the remaining butter/parsley’garlic blend.
29. Serve and enjoy!
