Ingredients

Filling
- 1 Onion, small yellow or sweet, diced
- 1 bell pepper
- 3 clove Garlic, minced
- pinch Red pepper flakes
- 0.5 tsp Oregano
- 0.5 tsp Salt, adjust to your preference
- Black pepper, to taste
- 0.333 c tomato pasta sauce
- 2 cans or jars white beans
- 0.5 c Basil, finely chopped
Other ingredients
- 0.5 c shredded mozzarella, adjust to your preference
- 8 taco shells

Directions

Preparation
1. Preheat oven to 425 degrees.
2. Heat oil in a skillet over medium heat.
3. Add onions and cook for 5 minutes.
4. Add bell pepper and garlic and cook for 5 more minutes.
5. Add all remaining filling ingredients to the skillet.
6. Stir to combine and cook for 5 more minutes.
7. Turn off heat, using a potato masher mash bean mixture until mixture starts to bind together.
8. Warm the taco shells in the microwave for 30-45 seconds. They should be soft and bendable.
9. Add taco shells to a sheet pan lined with parchment paper.
10. To each shell add 2-3 tablespoons of bean mixture.
11. Top with mozzarella and fold close.
12. To make sure the taco shells stay closed, carefully flip the taco shells so the bean mixture is on the top half.
Baking
1. Bake tacos for 8-10 minutes, flip and then bake for another 8-10 minutes.
2. Let cool and enjoy.
3. These tacos taste amazing with pizza sauce or pasta sauce.
