Rice and Eggs
- 2 cups day old rice
- 3 Eggs
Chop these up
- 0.5 Pineapple, chunks
- 0.5 Onion
- 0.5 Red bell pepper
- 3 sweet chinese sausages
- 2 thai chilis
- 4 cloves Garlic
- 1 tsp Ginger
Sauce
- 3 tbsp Oyster sauce
- 2 tbsp Fish sauce
- 1 tbsp Honey
- splash Maggi Seasoning
- sprinkle White pepper
- sprinkle Curry powder
- MSG
Toppings
- Cashews
- Pork belly
Garnish
- fried shallots
- Green onions
- Fly by Jing Zhong Sauce

Directions

Preparation of Ingredients
1. Cut pineapple into 1/2-1 inch chunks.
2. Slice onion, thinly cut red pepper, cut Thai chilis, and mince ginger and garlic.
3. Cut Chinese sausages.
Preparation of Sauce and Toppings
1. Combine sauce ingredients, set aside.
2. Glaze cashews and choice of cooked meat - I used crispy pork belly!
3. Whisk together eggs, scramble, and set aside.
4. Fry the Chinese sausage until cooked and set aside.
Sautéing and Assembling the Dish
1. Sauté minced garlic and ginger.
2. Add in white part of scallions and chilis, onions, peppers, and rice.
3. Add in toppings - cashews, sausages, eggs and pineapples.
4. Season with the leftover sauce and MSG.
5. Assemble with pork belly or choice of meat, scallion, onion crisps, and Zhong Sauce.
